Lemonade Apple Tea Cake

100g Buttercup (melted)
100g Castor sugar
3 Eggs
2 Apples
100g Raisins
50g Cranberries
¼ Lemon (squeezed for the juice)
1 ½ tsp Cinnamon powder
300g Plain flour
2 ½ tsp Baking powder
100g Cheddar (grated)
20g Almonds
1. Beat sugar and eggs until it is light and fluffy.
2. Add in flour, cinnamon powder, and baking powder.
3. Add in the apples, raisins, and cranberries. Fold all these ingredients together.
4. Then, add in lemon juice and mix well.
5. Next, add in the melted Buttercup and grated cheddar and mix well.
6. Pour the batter into a baking tin and sprinkle the almonds on top of it.
7. Bake at 180°C for 45 minutes or until the cake is cooked.
