Strawberry Sponge Cake

140g Castor sugar
18g Ovalette
6 Eggs
150g Superfine flour
1 tsp Baking powder
50g Water
1 tsp Strawberry flavouring
80g Buttercup (melted)
400g ‘Vivo’ fresh cream
200g Strawberry filling
A bit of pink colouring
1. Beat ovalette, castor sugar, eggs, baking powder, and superfine flour together until it is light and fluffy.
2. Add in water and then add in Buttercup. Mix until well-combined.
3. Pour the batter into an 8” cake tin and bake at 170°C for 30 minutes.
4. In the meantime, beat fresh cream until it is stiff.
5. Once the cake is baked and cooled, cover the cake with the fresh cream and then decorate with strawberry filling.
